Friday, November 17: In-Person Sessions

1:00 – 1:30 PM: “What Do (World Championship) Judges Want?”
The day kicks off with an in-person session delving into recent updates to competition rules, regulations, and scoring. Learn how the SCA’s three-year project influences the evaluation of specialty coffee quality in the World Barista Championship, World Brewers Cup, and World Coffee Roasting Championship.

2:00 – 2:30 PM: “Towards a Deeper Understanding of Espresso Extraction”
Explore the latest updates from a multi-year research project aimed at measuring espresso chemistry and its correlation to sensory attributes, providing coffee professionals with science-based tools.

3:30 – 4:00 PM: “Towards a Deeper Understanding of Cold Brew Extraction”
Discover the scientific insights into variations of key extraction and holding parameters affecting the chemical, physical, sensory, and consumer properties of cold-brewed coffee.

Witness competitors at the WCRC production roasting their single-origin coffees and assess different roasts of the same coffee using the SCA’s Coffee Value Assessment.

Dr. Mario Fernández-Alduenda addresses industry-wide challenges in defining green coffee amidst the “Processing Revolution.”

2:00 – 2:30 PM: “Sweetness in Coffee: Sensory Analysis and Identification of Key Compounds”
